1 (14 oz) can artichoke hearts, drained and chopped
1 small onion, finely chopped
1 garlic clove, minced
4 large eggs
1 cup shredded sharp cheddar cheese
1/4 cup seasoned bread crumbs
2 tablespoons chopped parsley
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon olive oil
Instructions
Preheat oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish.
In a skillet over medium heat, warm the olive oil and sauté the onion and garlic until soft and fragrant, about 3–4 minutes.
In a large bowl, beat the eggs. Stir in the chopped artichokes, sautéed onion mixture, shredded cheddar, bread crumbs, parsley, oregano, salt, and pepper.
Pour the mixture into the prepared baking dish and spread evenly.
Bake for 30–35 minutes, or until set and lightly golden on top.
Cool for 10 minutes before slicing into squares. Serve warm or at room temperature.
