- 8 slices of bacon
- 6 large eggs
- 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
- 1 cup diced vegetables (spinach, bell peppers, onions, etc.)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder (optional)
- Fresh herbs for garnish (optional)
- Preheat your oven to 350°F (175°C).
- Lightly grease a muffin tin or use silicone muffin cups for easy removal.
- In a skillet over medium heat, cook the bacon until it’s partially cooked but still pliable. Set aside on paper towels to drain.
- In a mixing bowl, whisk together the eggs, salt, pepper, and garlic powder until well combined.
- Stir in the shredded cheese and diced vegetables into the egg mixture.
- Take a slice of bacon and line the edges of each muffin cup, creating a circle.
