Wake up to a heavenly start with this easy Blueberry French Toast Casserole. This make-ahead breakfast bake features cubes of brioche soaked in a rich custard, studded with juicy blueberries, and baked to golden perfection. It’s the perfect stress-free dish for brunch or any special morning.

Ingredients

  • 1 loaf brioche or French bread, cubed
  • 1 1/2 cups fresh or frozen blueberries
  • 8 large eggs
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 tbsp pure vanilla extract
  • 1 tsp ground cinnamon
  • Zest of 1 lemon (optional)
  • Powdered sugar for serving
  • Pure maple syrup for serving

Instructions

  1. Generously butter or spray a 9×13-inch baking dish.
  2. Scatter half of the cubed bread evenly in the dish. Sprinkle 1 cup of blueberries over the bread. Repeat with the remaining bread and blueberries.
  3. In a large bowl, whisk the eggs until smooth. Stream in the milk and heavy cream while whisking.
  4. Add the granulated sugar, vanilla extract, cinnamon, and lemon zest (if using) to the egg mixture. Whisk until well combined.
  5. Slowly and evenly pour the custard mixture over the bread and blueberries in the baking dish. Gently press down on the bread to ensure it soaks up the custard.
  6. Cover the dish tightly with plastic wrap and refrigerate for at least 2 hours, or preferably overnight.
  7. When ready to bake, remove the casserole from the refrigerator 20-30 minutes before baking to take the chill off. Preheat your oven to 350°F (175°C).
  8. Remove the plastic wrap and bake, uncovered, for 45-50 minutes, or until the top is golden brown and the center is set.
  9. Let the casserole rest for 10-15 minutes after baking before slicing and serving.
  10. Dust with powdered sugar and serve with pure maple syrup.

  • Stale bread works best as it absorbs more custard without becoming mushy.
  • Frozen blueberries can be used directly from the freezer.
