1 cup all-purpose flour
1/2 cup granulated sugar
1/2 cup unsalted butter, softened
1/4 teaspoon salt
1 large egg
1 teaspoon vanilla extract
2 cups ricotta cheese, drained
1 cup powdered sugar
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 cup mini chocolate chips
Zest of 1 orange (optional)
Additional chocolate chips or crushed pistachios (optional)
Powdered sugar for dusting
Instructions
Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch baking dish with parchment paper.
In a mixing bowl, combine the flour, sugar, butter, salt, egg, and vanilla extract. Mix until a dough forms.
Spread the dough evenly into the bottom of the prepared baking dish, pressing it down firmly with your fingers or a spatula.
Place the crust in the preheated oven and bake for 15-20 minutes or until golden brown. Remove from the oven and let it cool slightly.
In a separate bowl, combine the ricotta cheese, powdered sugar, vanilla extract, ground cinnamon, chocolate chips, and orange zest. Mix until smooth and well combined.
Once the crust has cooled, spread the ricotta mixture evenly over the crust with a spatula.
Place the dish in the refrigerator and chill for at least 30 minutes to set the filling.
Once chilled, remove the dish from the refrigerator. Lift the squares out using the parchment paper and cut into even pieces.
If desired, sprinkle additional chocolate chips or crushed pistachios on top for added texture and flavor.
Just before serving, dust the tops with powdered sugar for a beautiful finishing touch.
