Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or line it with parchment paper for easy removal.
  2. Prepare the Crust: In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated. Press the mixture into the bottom of the prepared baking dish to form an even layer.
  3. Bake the Crust: Place the crust in the preheated oven and bake for 10 minutes. Remove it from the oven and let it cool slightly.
  4. Prepare the Cheesecake Layer: In a mixing bowl, beat the softened cream cheese and granulated sugar until smooth. Add the eggs, one at a time, mixing well after each addition. Then, stir in the vanilla extract and sour cream until fully combined.
  5. Spread the Cheesecake Mixture: Pour the cheesecake filling over the cooled crust, spreading it evenly with a spatula.
  6. Prepare the Apple Filling: In another bowl, toss the diced apples with sugar, cinnamon, and lemon juice until the apples are well-coated.
  7. Add Apples to Cheesecake: Evenly distribute the apple mixture over the cheesecake layer, pressing down gently to ensure they stay in place.
  8. Bake the Bars: Return the dish to the oven and bake for 30-35 minutes, or until the cheesecake is set and the edges are lightly golden.
