1 medium onion, chopped
2 cloves garlic, minced
2 cups broccoli florets
1-inch piece of fresh ginger, grated
4 cups vegetable broth
1 tablespoon olive oil
Salt and pepper to taste
Optional: a splash of coconut milk for creaminess
Optional: fresh herbs for garnish (e.g., cilantro or parsley)
Instructions
Begin by chopping the carrots, onion, and garlic. Grate the ginger and set aside.
In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent.
Stir in the chopped carrots and grated ginger. Cook for about 5 minutes, allowing the flavors to meld.
Add the broccoli florets to the pot along with the vegetable broth. Bring to a boil.
Lower the heat and let the mixture simmer for 15 minutes, or until the carrots and broccoli are tender.
Using an immersion blender, carefully blend the soup until smooth. Alternatively, if you don’t have an immersion blender, transfer the soup in batches to a countertop blender.
Taste the soup and season with salt and pepper as desired. For a creamier texture, stir in a splash of coconut milk.
Ladle the soup into bowls and garnish with fresh herbs if using.
