Instructions

  1. Begin by chopping the carrots, onion, and garlic. Grate the ginger and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent.
  3. Stir in the chopped carrots and grated ginger. Cook for about 5 minutes, allowing the flavors to meld.
  4. Add the broccoli florets to the pot along with the vegetable broth. Bring to a boil.
  5. Lower the heat and let the mixture simmer for 15 minutes, or until the carrots and broccoli are tender.
