1 pound smoked sausage, sliced
4 cups baby potatoes, halved or quartered
1 cup shredded cheddar cheese
1 packet ranch seasoning mix
1 cup sour cream
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the halved or quartered baby potatoes with olive oil, ranch seasoning, garlic powder, onion powder, salt, and pepper. Toss to coat the potatoes evenly.
Gently fold in the sliced smoked sausage with the seasoned potatoes, ensuring they are well mixed.
Pour the potato and sausage mixture into a large baking dish, spreading it out evenly.
Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the potatoes are tender and cooked through.
Remove the dish from the oven. Dollop the sour cream over the mixture and sprinkle the shredded cheddar cheese on top.
Put the dish back in the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Once cooked, remove the dish from the oven and let it cool slightly. Garnish with chopped fresh parsley before serving.
