  • 1 pound chicken apple sausage, cut into 1-inch pieces
  • 1 pound Brussels sprouts, trimmed and halved
  • 1 pound sweet potatoes, peeled and cubed
  • 1 large apple, cored and sliced
  • 1 red onion, cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss Brussels sprouts, sweet potatoes, apple slices, and red onion with olive oil, rosemary, salt, and pepper.
  3. Spread the vegetables and apple mixture in a single layer on a large baking sheet.
