  • 1 small pineapple, peeled and cored
  • 1 red bell pepper, diced

  • Salt and pepper to taste
  • Corn or flour tortillas
  • Avocado slices (optional)
  • Lime wedges (optional)

Instructions

  1. Marinate the chicken: In a bowl, whisk together olive oil, lime juice, lime zest, chili powder, cumin, garlic powder, salt, and pepper. Add the chicken and marinate for at least 15 minutes.
  2. Grill the chicken: Preheat the grill to medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side or until cooked through.
  3. Prepare the salsa: While the chicken is grilling, grill the pineapple until charred, then chop it. In a bowl, combine the grilled pineapple, red bell pepper, red onion, cilantro, lime juice, salt, and pepper to taste.
  4. Warm the tortillas: While the chicken rests, warm the tortillas on the grill for about 30 seconds on each side or until pliable.
  5. Assemble the tacos: Slice the grilled chicken into strips. On each tortilla, layer sliced chicken and top with grilled pineapple salsa. Add avocado slices and additional cilantro if desired.

  • You can adjust the spice level by adding more or less chili powder.
