1 pound boneless, skinless chicken breasts
3 tablespoons olive oil
Juice of 2 limes
Zest of 1 lime
2 tablespoons chili powder
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon black pepper
1 small pineapple, peeled and cored
1 red bell pepper, diced
¼ cup red onion, finely chopped
¼ cup fresh cilantro, chopped
Juice of 1 lime
Salt and pepper to taste
Corn or flour tortillas
Avocado slices (optional)

Additional fresh cilantro (optional)
Instructions
Marinate the chicken: In a bowl, whisk together olive oil, lime juice, lime zest, chili powder, cumin, garlic powder, salt, and pepper. Add the chicken and marinate for at least 15 minutes.
Grill the chicken: Preheat the grill to medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side or until cooked through.
Prepare the salsa: While the chicken is grilling, grill the pineapple until charred, then chop it. In a bowl, combine the grilled pineapple, red bell pepper, red onion, cilantro, lime juice, salt, and pepper to taste.
Warm the tortillas: While the chicken rests, warm the tortillas on the grill for about 30 seconds on each side or until pliable.
Assemble the tacos: Slice the grilled chicken into strips. On each tortilla, layer sliced chicken and top with grilled pineapple salsa. Add avocado slices and additional cilantro if desired.
Notes
You can adjust the spice level by adding more or less chili powder.
For a smoky flavor, consider using smoked paprika.
