  • 3 tablespoons unsalted butter, melted

Instructions

  1. In a large bowl, whisk together the flour, baking powder, sugar, salt, cinnamon, and nutmeg until well combined.
  2. In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.
  3. Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Small lumps are fine.
  4. Heat a griddle or non-stick skillet over medium heat. Lightly grease with butter or cooking spray.
  5. For each pancake, pour about ¼ cup of batter onto the hot griddle.
  6. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown.
  7. Remove pancakes and keep them warm in a preheated oven at 200°F (95°C) while you cook the remaining batter.
  8. Stack the pancakes on a plate and top with your favorite toppings.
