- 1 tablespoon granulated sugar
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- 1 ¼ cups milk
- 1 large egg
- 3 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- Maple syrup, for serving
- Whipped cream, for topping (optional)
- Fresh berries, for garnish (optional)
- In a large bowl, whisk together the flour, baking powder, sugar, salt, cinnamon, and nutmeg until well combined.
- In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.
- Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Small lumps are fine.
- Heat a griddle or non-stick skillet over medium heat. Lightly grease with butter or cooking spray.
- For each pancake, pour about ¼ cup of batter onto the hot griddle.
- Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown.
- Remove pancakes and keep them warm in a preheated oven at 200°F (95°C) while you cook the remaining batter.
- Stack the pancakes on a plate and top with your favorite toppings.
