4 medium-sized apples (Granny Smith or Honeycrisp work well)
1 package refrigerated pie crusts (2 crusts)
1 cup granulated sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 cup unsalted butter
1 cup water
1 teaspoon vanilla extract
1 tablespoon lemon juice

Instructions
Set your oven to 375°F (190°C) to prepare for baking.
Prepare the Apples: Peel, core, and slice the apples into wedges. Toss them in a bowl with lemon juice, sugar, cinnamon, and nutmeg.
Roll Out the Dough: Unroll the pie crusts on a floured surface. Cut each crust into four equal squares.
