  • 1 pound kielbasa sausage, cut into 1-inch pieces
  • 1 pound baby potatoes, halved
  • 1 cup bell peppers, chopped (any color)
  • ½ cup red onion, cut into wedges
  • ¼ cup cowboy butter (homemade or store-bought)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Fresh parsley, chopped (for garnish)
  • Skewers (wooden or metal)

Instructions

  1. If using wooden skewers, soak them in water for 30 minutes to prevent burning on the grill.
  2. In a pot, bring water to a boil and add the halved baby potatoes. Cook for 10-12 minutes until tender. Drain and set aside.
  3. In a small bowl, combine the cowboy butter with olive oil, garlic powder, smoked paprika, salt, and black pepper. Mix well until combined.
  4. In a large mixing bowl, add the cooked potatoes, kielbasa pieces, chopped bell peppers, and red onion. Drizzle with the cowboy butter mixture and toss to coat evenly.
  5. Thread the kielbasa, potatoes, bell peppers, and onion onto the skewers, alternating between ingredients for a colorful presentation.
  6. Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
  7. Place the skewers on the grill and cook for 12-15 minutes, turning occasionally, until the kielbasa is browned and the vegetables are tender.
  8. Once cooked, remove the skewers from the grill and sprinkle with chopped fresh parsley for added flavor and color.
