- 2 lbs beef chuck, cut into 1-inch cubes
- 4 cups apple cider
- 2 cups carrots, sliced
- 2 cups potatoes, diced
- 1 cup onion, chopped
- 1 cup celery, chopped
- 3 cups apples, peeled and diced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- 2 bay leaves
- Salt and pepper to taste
- Start by cutting the beef chuck into 1-inch cubes, and chop the vegetables and apples.
- In a large pot, heat olive oil over medium-high heat. Add the beef cubes and brown on all sides, about 5-7 minutes. Remove the meat and set aside.
- In the same pot, add the chopped onion, celery, and carrots. Sauté until the onion becomes translucent, about 5 minutes.
- Stir in the minced garlic, thyme, rosemary, and bay leaves. Cook for another minute until fragrant.
- Pour in the apple cider, scraping the bottom of the pot to release any browned bits.
- Return the browned beef to the pot. Add the diced potatoes and apples, stirring to combine all ingredients.
- Add salt and pepper to taste. Bring the mixture to a boil, then reduce heat to a simmer.
- Cover and let the stew simmer for about 1-1.5 hours, or until the beef is tender and the flavors meld together.
- Taste the stew and adjust seasoning if needed before serving.
