Cozy Fall Apple Cider Stew: An Amazing Ultimate Recipe

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 cups apple cider
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup onion, chopped
  • 1 cup celery, chopped
  • 3 cups apples, peeled and diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Start by cutting the beef chuck into 1-inch cubes, and chop the vegetables and apples.
  2. In a large pot, heat olive oil over medium-high heat. Add the beef cubes and brown on all sides, about 5-7 minutes. Remove the meat and set aside.
  3. In the same pot, add the chopped onion, celery, and carrots. Sauté until the onion becomes translucent, about 5 minutes.
  4. Stir in the minced garlic, thyme, rosemary, and bay leaves. Cook for another minute until fragrant.
  5. Pour in the apple cider, scraping the bottom of the pot to release any browned bits.
  6. Return the browned beef to the pot. Add the diced potatoes and apples, stirring to combine all ingredients.
  7. Add salt and pepper to taste. Bring the mixture to a boil, then reduce heat to a simmer.
  8. Cover and let the stew simmer for about 1-1.5 hours, or until the beef is tender and the flavors meld together.
  9. Taste the stew and adjust seasoning if needed before serving.
