1 cup wild rice
4 cups vegetable broth (or chicken broth)
2 cups fresh broccoli florets
1 cup diced onion
1 cup diced carrots
3 cloves garlic, minced
1 cup heavy cream (or coconut milk for a dairy-free option)
2 tablespoons olive oil
1 teaspoon dried thyme
Salt and pepper to taste
Fresh parsley or chives for garnish (optional)
Instructions
Start by rinsing the wild rice under cold water. Drain well.
In a large pot, heat olive oil over medium heat. Add diced onion and carrots, sautéing for about 5 minutes until soft.
Stir in the minced garlic and cook for an additional minute until fragrant.
Add the rinsed wild rice to the pot, followed by the vegetable (or chicken) broth. Bring to a boil, then reduce heat to low, cover, and simmer for 30-35 minutes, or until rice is tender.
Once the rice is cooked, add the fresh broccoli florets to the pot. Cook for an additional 5-7 minutes until the broccoli is tender but still vibrant green.
Stir in the heavy cream (or coconut milk) and dried thyme. Season with salt and pepper to taste. Heat through but do not boil.
For a creamier texture, you can use an immersion blender to blend a portion of the soup, leaving some chunks for texture.
Serve hot, garnished with chopped fresh parsley or chives if desired.
