  • 4 salmon fillets (about 6 oz each), skin-on or skinless
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 garlic cloves, minced
  • 1 cup orzo pasta
  • 2 cups chicken or vegetable broth
  • 1 cup milk
  • ½ cup grated parmesan cheese
  • Juice and zest of 1 lemon
  • 2 cups baby spinach

Instructions

  1. Pat salmon fillets dry and season generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear salmon for 4-5 minutes per side until golden brown. Remove salmon and set aside.
  2. Reduce skillet heat to medium. Melt butter in the same skillet. Add minced garlic and sauté until fragrant, about 60 seconds.
  3. Add orzo pasta to the skillet and toast for 1-2 minutes, stirring to coat.
  4. Pour in broth and milk. Stir well, scraping up browned bits. Bring to a simmer, then reduce heat to medium-low. Cook uncovered for 8-10 minutes, stirring occasionally, until orzo is tender and sauce is creamy.
  5. Turn off heat. Stir in parmesan cheese until melted. Add lemon juice, lemon zest, and baby spinach. Stir until spinach wilts.
  6. Nestle salmon fillets back into the skillet. Spoon some sauce over the salmon. Serve hot.

  • For crispy salmon skin, ensure fillets are patted completely dry before searing.
  • Don’t wash the skillet after searing the salmon; the browned bits add flavor.
