This one-pan Creamy Mushroom Chicken Skillet features juicy, seared chicken thighs and earthy mushrooms in a rich, garlicky Parmesan cream sauce. It’s a comforting and flavorful keto-friendly meal perfect for weeknights.

  • 6 bone-in, skin-on chicken thighs (about 2 lbs)
  • 2 tbsp olive oil
  • 8 oz mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ¾ cup Parmesan cheese, grated
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Pat chicken thighs dry. Season generously with salt, pepper, and half of the Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken skin-side down for 5-6 minutes until golden and crisp. Flip and cook for 4-5 minutes. Remove chicken to a plate.
  3. Add mushrooms to the same skillet and sauté until browned, about 5-7 minutes. Add minced garlic and cook for 1 minute until fragrant.
  4. Reduce heat to medium. Pour in heavy cream and chicken broth. Sprinkle with remaining Italian seasoning. Scrape browned bits from the pan.
  5. Whisk in grated Parmesan cheese until melted and the sauce thickens slightly.
  6. Return chicken thighs to the skillet, spooning sauce over. Simmer gently for 10 minutes, or until chicken is cooked through (165°F internal temperature).
  7. Taste and adjust seasoning. Garnish with fresh parsley before serving.
