2 cloves garlic, minced
4 cups vegetable broth
1 cup heavy cream
2 cups shredded smoked Gouda cheese
2 tablespoons olive oil

½ teaspoon red pepper flakes (optional)

Instructions
In a large pot, heat olive oil over medium heat. Add diced onions and sauté until translucent, about 5 minutes.
Stir in the minced garlic and sauté for an additional minute until fragrant.
Add the broccoli florets to the pot. Sauté for 2-3 minutes, allowing them to soften slightly.
Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat and let it simmer for about 10-15 minutes, until the broccoli is tender.
Using an immersion blender, carefully blend the soup until smooth. You can also transfer it to a regular blender in batches, but be cautious of hot liquid.
Return the blended soup to the pot. Stir in the heavy cream and mix well.
Gradually add the shredded smoked Gouda cheese, stirring until completely melted and incorporated.
Add salt, black pepper, and red pepper flakes if desired. Adjust seasoning to taste.
Let the soup simmer on low heat for an additional 5 minutes to ensure it is heated through.
Ladle the soup into bowls, garnishing with fresh parsley if desired.
