Creamy Tuscan White Bean Skillet: An Amazing Ultimate Recipe

Ingredients

Scale
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced (red or yellow)
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach leaves, fresh
  • 1 cup vegetable broth
  • ½ cup heavy cream or coconut milk
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh basil, for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced onion and sauté for about 3-4 minutes until translucent.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the diced bell pepper and cook for another 3-4 minutes until softened.
  5. Stir in the cherry tomatoes and cook until they start to burst, approximately 2-3 minutes.
  6. Gently fold in the white beans, ensuring they are evenly distributed in the mixture.
  7. Add the vegetable broth and bring the mixture to a gentle simmer.
  8. Once simmering, slowly pour in the heavy cream or coconut milk, stirring until well combined.
  9. Sprinkle in the Italian seasoning, salt, and pepper, adjusting to taste.
  10. Stir in the fresh spinach leaves until they wilt, which should only take about a minute.
  11. Remove from heat, garnish with fresh basil, and serve warm.
