1 pound fresh salmon fillet, skin removed
1 cup panko breadcrumbs
1/2 cup all-purpose flour
2 large eggs, beaten
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
Vegetable oil for frying
Instructions
Cut the salmon fillet into bite-sized cubes.
Set up the breading station: In three separate bowls, place flour in one, beaten eggs in the second, and panko breadcrumbs mixed with garlic powder, paprika, salt, and pepper in the third.
Dip each salmon cube into the flour, shaking off excess. Next, coat it in the beaten eggs, and finally, roll it in the panko breadcrumb mixture until fully covered.
In a large skillet, heat about 1/2 inch of vegetable oil over medium-high heat until hot.
Carefully place the breaded salmon cubes in the hot oil. Fry them in batches to avoid overcrowding. Cook for about 3-4 minutes on each side until golden brown and crispy.
Remove the salmon bites from the skillet and place them on a paper towel-lined plate to absorb excess oil.
In a bowl, mix together mayonnaise, sweet chili sauce, sriracha, lime juice, and honey until smooth to make the Bang Bang sauce.
You can either toss the crispy salmon bites in the Bang Bang sauce or serve the sauce on the side for dipping.
Sprinkle sliced green onions over the salmon bites for an added touch of flavor and presentation.
