  • 1 pound boneless chicken thighs
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons sake (or white wine)
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 1/2 cup potato starch or cornstarch
  • Oil for frying

Instructions

  1. Cut chicken thighs into bite-sized pieces and place in a bowl.
  2. Add soy sauce, sake, garlic, and ginger; mix well and marinate for at least 30 minutes.
  3. In another bowl, add potato starch or cornstarch for coating.
  4. Heat two inches of oil in a deep pan to 350°F (175°C).
  5. Shake off excess marinade from the chicken and carefully fry in batches until golden brown (about 4–5 minutes per batch).
  6. Drain on paper towels and let rest before serving.
