A tender and flavorful pot roast with a sweet and spicy chipotle pineapple sauce, perfect for a busy weeknight meal. This Crockpot Chipotle Pineapple Pot Roast is easy to prepare and results in a delicious, comforting dish served over rice.

  • 34 lbs Beef chuck roast
  • 1 can (20 oz) Pineapple chunks in juice, undrained
  • 1 cup Beef broth
  • 23 Chipotle peppers in adobo sauce, chopped
  • 1 medium Onion, sliced
  • 4 cloves Garlic, minced
  • 1 tablespoon Ground cumin
  • 1 tablespoon Smoked paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 1 cup Cooked rice, for serving
  • Fresh cilantro, chopped, for garnish
  • Lime wedges, for serving

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Sear the beef chuck roast on all sides until browned, about 3-4 minutes per side. Transfer to the crockpot.
  2. In a bowl, combine the pineapple chunks with juice, beef broth, chopped chipotle peppers, sliced onion, minced garlic, ground cumin, smoked paprika, salt, and black pepper. Stir well.
  3. Pour the pineapple mixture over the seared pot roast in the crockpot, ensuring the roast is well-covered.
  4. Cover and cook on low for 8 hours or on high for 4 hours, until the meat is tender and shreds easily with a fork.
  5. Once cooked, remove the pot roast from the crockpot and shred the meat using two forks.
  6. Return the shredded meat to the crockpot and stir it into the sauce.
  7. Serve the chipotle pineapple pot roast over cooked rice. Garnish with fresh cilantro and lime wedges on the side.

Notes

  • For extra heat, add more chipotle peppers.
  • You can also substitute the beef chuck roast with pork shoulder for a different flavor.
