Delight in the festive flavors of Italian Easter Pie, also known as Pizza di Pasqua. This traditional spring dessert features a buttery, flaky crust surrounding a creamy ricotta filling enriched with sweet candied citrus and aromatic spices.

Ingredients

Scale
  • 2 cups all-purpose flour
  • ½ cup unsalted butter, chilled and cubed
  • ¾ cup granulated sugar
  • 2 cups whole milk ricotta cheese
  • 3 large eggs
  • ½ cup mixed candied citrus peel
  • 1 tsp ground cinnamon
  • Zest of 1 lemon
  • Zest of 1 orange
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine flour and sugar. Cut in the chilled butter until it resembles coarse crumbs. Gradually add cold water until dough forms. Wrap in plastic wrap and refrigerate for about one hour.
  2. In another bowl, blend ricotta cheese with sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in candied citrus peel, cinnamon, lemon zest, and orange zest until fully incorporated.
  3. Roll out half of the chilled dough on a floured surface into an eighth-inch thick circle and transfer it to a pie dish; trim any excess dough hanging over the edges.
  4. Pour the ricotta filling into the prepared crust evenly but leave some space at the top as it may puff during baking.
  5. Roll out the second half of the dough into another circle and place it over the filling. Pinch edges to seal and cut slits in the top for steam vents.
  6. Bake for 45-50 minutes or until golden brown on top. Let cool before slicing.

Notes
