Easter Bunny Cheesecake Parfaits are almost too cute to eat—almost. With dreamy layers of pastel-colored cheesecake mousse, buttery crushed cookies, and fluffy whipped cream, these no-bake parfaits are fun to make and even more fun to serve. They’re perfect for Easter brunch, dessert tables, or as a festive spring surprise for the kids.

Ingredients

Scale
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups whipped topping (like Cool Whip)
  • Gel food coloring (pastel pink, yellow, blue, purple)
  • 1 ½ cups crushed vanilla sandwich cookies (or graham crackers)
  • Extra whipped topping (for topping)
  • Easter sprinkles or candy (optional, for garnish)

Instructions

  1. Make cheesecake mousse: Beat cream cheese, powdered sugar, and vanilla until smooth. Fold in whipped topping.
  2. Color it up: Divide mousse evenly into 3–4 bowls. Tint each with a different pastel color.
  3. Layer the parfaits: In clear cups or jars, layer crushed cookies, then a spoonful of each colored mousse. Repeat if space allows.
  4. Top it off: Add a dollop of whipped topping and garnish with sprinkles or Easter candies.
  5. Chill & serve: Refrigerate for at least 1 hour before serving.

Notes

  • Make ahead: These parfaits can be made a day in advance and stored in the fridge.
  • Customize colors: Use your favorite pastel shades for a personal touch.
  • Serving size: Adjust the portions based on your guests.
