Easy Spinach Leek Puff Pastry Pinwheels are buttery, cheesy, and full of savory flavor. Creamy spinach, leeks, and melted cheeses are wrapped in flaky puff pastry for the perfect make-ahead appetizer.

  • 2 sheets puff pastry (thawed)
  • 3 leeks (thinly sliced, white and light green parts only)
  • 1 (10 oz package) frozen spinach (thawed and well-drained)
  • 16 oz cream cheese (softened)
  • ½ cup Gruyère cheese (shredded)
  • ½ cup cheddar cheese (shredded)
  • 2 cloves garlic (minced)
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
  • salt and black ground pepper (to taste)
  • 1 egg (beaten for egg wash)

Instructions

  1. Prep the filling: In a skillet, heat a little butter or olive oil over medium heat. Add the sliced leeks and sauté until soft, about 5 minutes. Stir in the minced garlic and cook for another minute. Remove from heat and let cool slightly.
  2. Mix the cheeses: In a large bowl, combine the softened cream cheese, shredded Gruyère, cheddar, and thyme. Mix until smooth, then fold in the cooked leeks and drained spinach. Season with salt and pepper to taste.
  3. Roll and fill: Unfold one sheet of puff pastry on a lightly floured surface. Spread half of the spinach-leek mixture evenly across, leaving a small border around the edges. Roll the pastry tightly into a log, wrap in plastic wrap, and refrigerate for 30 minutes. Repeat with the second sheet.
  4. Slice and bake: Preheat the oven to 400°F (200°C). Slice each log into ½-inch rounds and place them on a parchment-lined baking sheet. Brush the tops with beaten egg for that golden shine.
  5. Bake: Bake for 18–22 minutes, or until puffed and golden brown. Let cool slightly before serving.
  6. Serve and enjoy: Serve warm or at room temperature.
