2 ¾ cups all-purpose flour
1 tsp baking soda
½ tsp salt
1 cup unsalted butter (room temperature)
¾ cup granulated sugar
¾ cup brown sugar (packed)
1 tsp vanilla extract
¼ tsp almond extract
1 large egg
½ tsp green food coloring
Optional: sprinkles or icing for decoration
Instructions
Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
In a bowl, whisk together flour, baking soda, and salt; set aside.
In another bowl, cream butter, granulated sugar, and brown sugar until fluffy. Mix in vanilla and almond extracts followed by the egg.
Add green food coloring to the wet mixture until desired color is achieved.
Gradually combine dry ingredients with the wet mixture until just incorporated.
Using a cookie scoop or tablespoon, drop dough onto prepared baking sheets about two inches apart.
Bake for 10 minutes or until edges are lightly golden; centers should remain soft.
Cool slightly before decorating with sprinkles or icing.
