1 cup dried pinto beans
4 slices of bacon, chopped
1 medium onion, diced
2 cloves of garlic, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
4 cups chicken broth
1 bay leaf
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
Rinse the dried pinto beans under cold water. Soak them in a large bowl with water for at least 6 hours or overnight. Drain and set aside.
In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon and set it aside, leaving the rendered fat in the pot.
In the same pot, add the diced onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
Sprinkle in the ground cumin and smoked paprika, stirring to coat the onion and garlic mixture evenly.
Add the soaked and drained pinto beans, cooked bacon, chicken broth, and bay leaf. Stir well to combine.
Bring the mixture to a gentle boil. Reduce the heat to low, cover the pot, and let it simmer for about 1 to 1.5 hours, or until the beans are tender.
Once the beans are cooked, season with salt and pepper to taste. Remove the bay leaf before serving. Garnish with fresh parsley.
