1 medium onion, finely chopped
2 cloves garlic, minced
8 ounces mushrooms (cremini or button), sliced
1 cup long-grain white rice, uncooked
2 cups vegetable broth
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh parsley, chopped
Instructions
Heat olive oil in a medium saucepan over medium heat. Add chopped onion and cook until softened, about 5 minutes.
Add minced garlic and sliced mushrooms to the saucepan. Cook until mushrooms are browned and tender, about 7-10 minutes.
Stir in the uncooked rice, vegetable broth, salt, and pepper. Bring the mixture to a boil.
Once boiling, reduce heat to low, cover the saucepan, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
Remove from heat and let it stand, covered, for 5 minutes.
Fluff the rice with a fork and stir in the chopped fresh parsley. Serve this incredible mushroom pilaf hot.
