Instructions

  1. Pour canola oil into a heavy-bottomed pot or Dutch oven until it’s about 2 inches deep. Attach a deep-fry or candy thermometer and heat the oil over medium-high heat until it reaches a steady 350°F (175°C).
  2. While the oil heats, prepare your dredging station. In one medium bowl, whisk together the flour, salt, smoked paprika, garlic powder, and black pepper until combined.
  3. In a second bowl, lightly beat the two eggs, then pour in the beer. Whisk it together until you have a smooth, thin, pancake-batter-like consistency. Do not over-mix.
  4. Take a handful of your jalapeño rings and toss them into the flour mixture, shaking off any excess for a light, even dusting.
  5. Next, dunk the floured jalapeno slices into the beer batter, making sure they are fully coated. Let any extra batter drip off.
  6. Using tongs or a slotted spoon, carefully lower a few battered jalapenos into the hot oil. Avoid crowding the pot to maintain oil temperature and ensure crispy fried jalapeno slices.
  7. Fry in small batches for about 1-2 minutes, flipping them once halfway through, until they are a gorgeous, uniform golden brown. These deep-fried hot peppers will become beautifully crispy.
