Ingredients

Scale
  • 2 cups butter (room temperature)
  • 1 1/2 cups granulated sugar
  • 1 1/4 cups packed brown sugar
  • 2 eggs
  • 4 tsp vanilla extract
  • 2 tbsp molasses (optional)
  • 2 tbsp corn syrup (optional)
  • 5 cups all-purpose flour
  • 1 1/4 cups cocoa powder
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 4 tsp espresso powder (optional)
  • 1 cup butter (room temperature, for frosting)
  • 3 cups marshmallow fluff
  • 7 cups powdered sugar
  • 4 tsp vanilla extract (for frosting)
  • 1 1/4 cup heavy cream
  • Food coloring (optional)
  • Festive Sprinkles
  • Melted Chocolate or Caramel Drizzle (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  2. In a large bowl, cream together 2 cups butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each. Mix in 4 tsp vanilla extract, molasses, and corn syrup until smooth.
  4. In a separate bowl, whisk together flour, cocoa powder, baking powder, baking soda, and espresso powder.
  5. Gradually add dry ingredients to wet ingredients on low speed until just combined. Do not overmix.
  6. Scoop dough into balls and place on prepared sheets, about 2 inches apart. Gently flatten each ball.
  7. Bake for 9-11 minutes, or until centers appear slightly underdone.
  8. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  9. For the frosting: Beat 1 cup butter until smooth. Add marshmallow fluff and beat until combined.
  10. Gradually add powdered sugar, alternating with heavy cream and 4 tsp vanilla extract, until light and fluffy. Tint with food coloring if desired.
  11. Once cookies are completely cool, spread frosting onto each cookie.
  12. Add sprinkles immediately. Drizzle with melted chocolate or caramel if using.

Notes

  • Use black cocoa powder for a darker, more intense chocolate flavor.
  • Espresso powder enhances the chocolate flavor without adding a coffee taste.
  • Ensure butter is at room temperature for proper creaming.
  • Do not overmix the dough to prevent tough cookies.
  • Cookies may appear slightly underdone in the center when removed from the oven; this is ideal for a fudgy texture.
  • Allow cookies to cool completely before frosting.
  • Store frosted cookies in an airtight container in the refrigerator.
