These garlic butter chicken thighs are seared to golden perfection and simmered in a rich, garlicky butter sauce. With crisp skin and tender meat, this easy skillet recipe is a weeknight dinner hero.

  • 6 bone-in, skin-on chicken thighs
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • 4 tbsp unsalted butter
  • 5 garlic cloves, minced
  • 1/2 tsp paprika
  • 1/2 tsp Italian seasoning (or dried thyme/oregano)
  • Optional: fresh parsley & lemon wedges for serving

Instructions

  1. Pat chicken thighs dry and season both sides with salt, pepper, and paprika.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken skin-side down for 5–7 minutes until crispy and golden. Flip and cook another 5–6 minutes.
  3. Remove chicken briefly. Lower heat to medium, melt butter in the same skillet, and stir in garlic and Italian seasoning. Sauté for 1 minute.
  4. Return chicken to the skillet, spoon garlic butter over the top, and cook for 5–10 more minutes until fully cooked (internal temp 165°F/74°C).
  5. Garnish with fresh parsley and a squeeze of lemon before serving.
