Ingredients

Scale
  • 4 salmon fillets
  • 2 medium sweet potatoes, diced
  • 1 pound fresh green beans, trimmed
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced sweet potatoes with 2 tablespoons of melted butter, paprika, salt, and pepper in a large bowl. Spread them evenly on one side of a baking sheet.
  3. Place the baking sheet in the preheated oven and roast the sweet potatoes for about 15 minutes.
  4. In a bowl, combine the trimmed green beans with 1 tablespoon of melted butter, salt, and pepper. Set aside.
  5. After the sweet potatoes have roasted for 15 minutes, remove the baking sheet from the oven. Push the sweet potatoes to one side of the baking sheet and add the salmon fillets. Top each fillet with minced garlic and the remaining melted butter.
  6. Spread the seasoned green beans on the other side of the baking sheet, arranging them evenly.
  7. Place the baking sheet back in the oven and roast for an additional 10-12 minutes. Cook until the salmon flakes easily with a fork and the sweet potatoes are tender.
  8. Once cooked, remove the baking sheet from the oven. Drizzle with fresh lemon juice and sprinkle with chopped parsley.
  9. Transfer the salmon, sweet potatoes, and green beans to serving plates. Serve immediately, adding lemon wedges for a zesty touch.
