  • 1 pound fresh green beans, trimmed and cut into 1-inch pieces
  • 1 cup lump crab meat, drained and picked over for shells
  • 1 cup sour cream
  • 1 cup cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup French fried onions
  • 1 tablespoon olive oil (for greasing)

Instructions

  1. Begin by preheating your oven to 350°F (175°C).
  2. In a pot of boiling salted water, blanch the green beans for about 3-4 minutes until they are bright green and slightly tender. Drain and set aside.
  3. In a large mixing bowl, combine the sour cream, cream of mushroom soup, shredded cheddar cheese, garlic powder, onion powder, salt, and black pepper. Mix well until fully incorporated.
  4. Gently fold in the lump crab meat and the blanched green beans into the mixture, being careful not to break up the crab too much.
  5. Grease a medium-sized casserole dish with olive oil. Pour the mixture into the dish, spreading it evenly.
  6. Sprinkle the French fried onions evenly over the top of the casserole for added crunch and flavor.
  7. Place the casserole in the preheated oven and bake for 35-40 minutes, or until bubbly and the top is golden brown.
  8. Once baked, remove the casserole from the oven and allow it to cool for about 10-15 minutes before serving.
