Hasselback brats with a honey mustard glaze, served alongside two types of mashed potatoes. This recipe offers a unique presentation and a delightful balance of sweet and savory flavors.

Ingredients

Scale
  • 4 large bratwursts
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 tablespoon yellow mustard
  • 1 tablespoon Dijon mustard
  • Salt and pepper, to taste
  • 2 medium-sized potatoes (for creamy mashed potatoes)
  • 2 medium-sized sweet potatoes (for sweet mashed potatoes)
  • 4 tablespoons butter
  • ½ cup milk (or more, as needed)
  • 1 teaspoon garlic powder
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the bratwursts on a cutting board. Make multiple thin slits along the length of each brat without cutting all the way through.
  3. In a small bowl, mix the olive oil, honey, yellow mustard, Dijon mustard, salt, and pepper until well combined.
  4. Brush the glaze generously over the brats, ensuring it seeps into the slits.
  5. Lay the prepared brats on a baking sheet lined with parchment paper. Bake for 20 minutes, flipping them halfway through.
  6. While the brats are baking, peel the regular and sweet potatoes. Cut them into chunks for even cooking.
  7. Place the potato chunks in a large pot of salted water and bring to a boil. Cook for about 15-20 minutes until fork-tender.
  8. Drain the potatoes and return them to the pot. Add in butter, milk, garlic powder, salt, and pepper, then mash until smooth and creamy.
  9. After 20 minutes, check the brats. They should have a lovely golden color. If additional crispiness is desired, broil for an extra 2 minutes.
  10. Remove the brats from the oven and let them rest for a few minutes. Optionally, sprinkle fresh herbs on top for a pop of color.
  11. Serve hot brats alongside mounds of the two types of mashed potatoes, drizzling any remaining glaze over the top.
