  • 1 clove garlic, minced
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 1 cup fresh pineapple chunks
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together pineapple juice, soy sauce, brown sugar, rice vinegar, ginger, and garlic.
  2. Add chicken pieces to the marinade, toss to coat, and let marinate for at least 30 minutes, or up to 4 hours in the refrigerator. This is key for your Hawaiian chicken bake.
  3. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
