4 large ripe tomatoes
12 ounces fresh mozzarella cheese
1 cup fresh basil leaves
½ cup balsamic vinegar
2 tablespoons olive oil
Salt and pepper to taste
Instructions
In a small saucepan, bring the balsamic vinegar to a simmer over medium heat. Reduce the heat to low and let it simmer until it thickens, about 10-15 minutes. Remove from heat and let it cool.
Slice the tomatoes into thick slices, about ½ inch each. If you’re using heart-shaped cookie cutters, cut the slices into heart shapes.
Slice the mozzarella cheese into similar-sized slices as the tomatoes.
On a large platter, alternate layers of tomato slices and mozzarella slices, forming a heart shape if desired.
