4 cups fresh broccoli florets
2 medium Honeycrisp apples, diced
1 cup red grapes, halved
½ cup chopped walnuts or pecans
½ cup shredded sharp cheddar cheese
½ cup mayonnaise
¼ cup plain Greek yogurt
2 tablespoons honey
1 tablespoon apple cider vinegar
Salt and pepper to taste
Instructions
Wash and cut the broccoli into small florets. Blanch them in boiling water for 2-3 minutes, then transfer them to an ice bath to stop cooking. Drain and set aside.
Core and dice the Honeycrisp apples, leaving the skin on for extra nutrients and color.
Wash and halve the red grapes, setting them aside in a large mixing bowl.
Roughly chop the walnuts or pecans.
In a separate bowl, combine the mayonnaise, Greek yogurt, honey, apple cider vinegar, salt, and pepper. Whisk until smooth.
In the large mixing bowl with the grapes, add the blanched broccoli, diced apples, chopped nuts, and shredded cheddar cheese.
Pour the dressing over the salad mixture and toss gently to combine.
Cover the bowl and refrigerate the salad for at least 30 minutes.
Once chilled, give the salad a gentle toss before serving.
Notes
This salad is best served chilled.
You can substitute Greek yogurt with sour cream if preferred.
Adjust the sweetness by adding more or less honey.
