  • 2025 Biscoff cookies
  • 1 cup Biscoff spread
  • 1 cup mascarpone cheese (at room temperature)
  • 1 cup heavy cream (whipped)
  • 1/4 cup sugar
  • 1 cup brewed coffee or espresso (cooled)

Instructions

  1. Brew coffee and let it cool.
  2. Whip heavy cream until soft peaks form.
  3. In a separate bowl, mix mascarpone cheese and sugar until smooth.
  4. Gently fold whipped cream into the mascarpone mixture until combined.
  5. Briefly dip each Biscoff cookie into the cooled coffee, layer them at the bottom of a serving dish, then spread half of the mascarpone mixture over the cookies.
  6. Repeat with remaining cookies and mascarpone mix.
  7. Cover and refrigerate for at least 4 hours or overnight before serving.
