- 1/3 cup unsweetened cocoa powder
- 3/4 cup granulated sugar
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsweetened applesauce
- 1/2 cup non-dairy milk (almond or oat)
- 1/4 cup vegetable oil (or melted coconut oil)
- 1 tsp vanilla extract
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large bowl, whisk together the flour, cocoa powder, sugar, baking soda, and salt until combined.
- In another bowl, mix the applesauce, non-dairy milk, vegetable oil, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined.
- Fill each cupcake liner about two-thirds full with batter.
- Bake for 18–20 minutes or until a toothpick inserted in the center comes out clean.
