Valentine’s Day Vegan Chocolate Cupcakes are the ultimate dairy-free treat to indulge your sweet tooth and impress your loved ones.

  • 1/3 cup unsweetened cocoa powder
  • 3/4 cup granulated sugar
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsweetened applesauce
  • 1/2 cup non-dairy milk (almond or oat)
  • 1/4 cup vegetable oil (or melted coconut oil)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, cocoa powder, sugar, baking soda, and salt until combined.
  3. In another bowl, mix the applesauce, non-dairy milk, vegetable oil, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fill each cupcake liner about two-thirds full with batter.
  6. Bake for 18–20 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the cupcakes to cool before frosting.
