  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 medium head of fresh cauliflower (about 3 cups florets)
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tsp dried Italian herbs (basil, oregano, thyme)
  • Salt and pepper to taste
  • Nonstick cooking spray

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
  2. Season the chicken breasts with salt and pepper, then place them in the dish.
  3. Cut the cauliflower into bite-sized florets and arrange around the chicken.
  4. In a saucepan, melt 2 tablespoons of butter over medium heat. Add minced garlic and sauté until fragrant.
  5. Stir in chicken broth and heavy cream; whisk in Parmesan cheese until thickened.
  6. Pour the creamy sauce over the chicken and cauliflower, cover with foil, and bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C). Remove foil for the last 5 minutes to brown.
