Focaccia with Caramelized Onions, Pear, and Blue Cheese

Ingredients

  • 3 cups all-purpose flour
  • 2 tsp active dry yeast
  • 1 cup warm water (110°F/43°C)
  • 2 tbsp olive oil
  • 1 cup caramelized onions (about 2 large onions)
  • 1 ripe pear, sliced
  • 4 oz blue cheese, crumbled

Instructions

  1. In a mixing bowl, combine warm water and yeast; let sit for 5 minutes until foamy. Mix in olive oil.
  2. Gradually add flour and salt; stir until combined and knead on a floured surface for about 10 minutes until smooth.
  3. Place dough in an oiled bowl, cover, and let rise in a warm spot for about 1 hour or until doubled in size.
  4. While dough rises, caramelize thinly sliced onions in olive oil over low heat for about 30 minutes until golden brown.
  5. Stretch risen dough onto a parchment-lined baking sheet. Top with caramelized onions, pear slices, and blue cheese crumbles.
  6. Preheat oven to 425°F (220°C) and bake for about 25 minutes until golden brown. Drizzle with balsamic glaze before serving if desired.

Notes

  • For a sweeter flavor, use a ripe pear.
  • Adjust the amount of blue cheese according to your taste.
  • Store leftovers in an airtight container.
