  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz spaghetti or fettuccine
  • 45 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and reserve 1 cup of pasta water.
  2. In a large skillet over medium heat, add olive oil. Season chicken breasts with salt and pepper, then cook for 6-7 minutes on each side until golden brown. Remove from the skillet and let rest before slicing.
  3. In the same skillet, sauté minced garlic for about 1 minute until fragrant.
  4. Pour in heavy cream while scraping up any bits from the skillet bottom. Stir continuously until simmering, then gradually mix in Parmesan cheese until melted.
  5. Return sliced chicken to the skillet along with cooked pasta. Toss everything together, adding reserved pasta water bit by bit for desired consistency.
  6. Serve garnished with additional Parmesan cheese and freshly cracked black pepper.
