1/2 cup freshly squeezed grapefruit juice
1 cup granulated sugar
1/4 cup unsalted butter, melted
1 cup all-purpose flour
3 large eggs
1/4 cup powdered sugar (for topping)
Instructions
Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
In a medium bowl, mix melted butter, granulated sugar, and flour until combined. Press into the bottom of the prepared pan to create an even crust layer.
In another bowl, whisk together grapefruit juice, eggs, and remaining granulated sugar until smooth. Pour over the crust.
Bake for 25-30 minutes until set but slightly jiggly in the center. Let cool completely before slicing into squares.
