Lemon garlic salmon tray bake is a vibrant, one-pan dish that combines zesty lemon and aromatic garlic with juicy salmon and colorful vegetables.

Ingredients

  • 4 (6 oz) salmon fillets
  • 3 cloves garlic, minced
  • 2 tbsp fresh lemon juice
  • 1 cup cherry tomatoes, halved
  • 1 medium zucchini, sliced thinly
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss cherry tomatoes and zucchini with olive oil, salt, and pepper until well coated.
  3. Place salmon fillets skin-side down on the baking sheet. Drizzle with olive oil and squeeze fresh lemon juice over each fillet.
  4. Sprinkle minced garlic over the salmon and arrange the seasoned veggies around it.
  5. Bake for 15-20 minutes or until the salmon flakes easily with a fork.
  6. Serve hot, drizzled with additional lemon juice if desired.
