Preheat the oven to 400°F (200°C). Grease a baking dish with nonstick spray.
Season chicken breasts with salt and pepper. Sear in olive oil over medium heat until golden brown on both sides (about 3-4 minutes each). Remove from skillet.
In the same skillet, sauté minced garlic until fragrant. Whisk in heavy cream, soy sauce, herbs, and parmesan cheese until smooth.
Pour half the sauce into the baking dish and place chicken on top. Drizzle remaining sauce over the chicken.
Bake for 25-30 minutes or until chicken reaches an internal temperature of 165°F (74°C). Let rest before serving.
