- 1 tbsp baking powder
- 1/2 cup unsalted butter (room temperature)
- 1 cup granulated sugar
- 1 cup coconut milk
- 1 cup shredded coconut (sweetened or unsweetened)
- 4 large eggs (room temperature)
- 2 tsp vanilla extract
- 8 oz cream cheese (softened)
- 3 cups powdered sugar
- Additional shredded coconut for decoration
- Preheat your oven to 350°F (175°C). Grease and flour two round cake pans.
- In a bowl, whisk together flour and baking powder.
- In a large mixing bowl, cream softened butter and sugar until light and fluffy. Add eggs one at a time until fully incorporated.
