Irresistible Oven-Baked Salmon Sushi Bites are a delightful twist on traditional sushi, combining flaky baked salmon with seasoned sushi rice and creamy avocado, all wrapped in nori for a savory, bite-sized treat. Easy to make and impressive to serve, these bites are perfect for parties or a unique snack.

  • 1 lb fresh salmon fillets (skinless)
  • 1 cup sushi rice
  • 4 nori sheets
  • 1 ripe avocado, sliced
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 2 tablespoons Sriracha
  • 2 tablespoons mayonnaise (preferably Kewpie)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse sushi rice under cold water until clear; cook with 2 cups of water according to package instructions and let cool slightly.
  3. Mix cooled rice with 3 tablespoons of rice vinegar and 1 tablespoon of sugar until evenly coated.
  4. Lay a nori sheet shiny side down, spread sushi rice over two-thirds, and top with salmon slices and avocado.
  5. Roll tightly away from you; seal the edge with water.
  6. Slice rolls into bite-sized pieces, place on a baking sheet lined with parchment paper, drizzle with sesame oil, and bake for 12-15 minutes until golden.
  7. Prepare the spicy mayo by mixing Sriracha and mayonnaise.
  8. Serve the oven-baked salmon sushi bites with soy sauce and spicy mayo.
