  • 1/2 cup unsalted butter, softened
  • 3/4 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp instant coffee grounds
  • 1/2 tsp peppermint extract
  • 1/4 cup crushed candy canes (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt; set aside.
  3. In another bowl, cream together softened butter, brown sugar, and granulated sugar until fluffy. Add egg and vanilla; mix well.
  4. Gradually incorporate dry ingredients into wet mixture along with coffee grounds and peppermint extract.
  5. Drop rounded tablespoons of dough onto prepared baking sheets. Bake for about 10 minutes until edges are slightly crispy.
  6. Remove from oven and immediately sprinkle with crushed candy canes. Allow to cool before serving.
