  • 3 cups all-purpose flour
  • 2 1/4 tsp active dry yeast (1 packet)
  • 1 cup pumpkin puree
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter, melted
  • 1 tsp sea salt
  • 1/2 cup warm water (110°F)
  • 1/4 cup fresh sage leaves, finely chopped (or use dried sage)
  • Extra melted butter for brushing
  • Sea salt for sprinkling

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. In a small bowl, mix warm water and yeast; let sit until frothy (about 5 minutes).
  3. In a large mixing bowl, combine flour, brown sugar, and salt; add yeast mixture, pumpkin puree, and melted butter.
  4. Stir until a soft dough forms.
  5. Knead on a floured surface for about 8 minutes until smooth and elastic.
  6. Place in a greased bowl, cover with a damp cloth, and let rise in a warm area until doubled (about 1 hour).
  7. Punch down the dough; divide into small balls and arrange them close together in the prepared dish.
  8. Brush with melted butter mixed with chopped sage; bake for about 25 minutes until golden brown.

Notes

  • Use unbleached flour for better flavor.
  • Fresh sage adds depth; dried sage can be used in a pinch.
  • Store leftover rolls in an airtight container at room temperature for up to two days.
  • Reheat in a preheated oven at 350°F for about 5-10 minutes.
