1 ½ cups graham cracker crumbs
½ cup unsalted butter, melted
1 cup white chocolate chips
1 ½ cups fresh or frozen cranberries
¾ cup granulated sugar
3 large eggs (room temperature)
1 tsp pure vanilla extract
Instructions
Preheat your oven to 350°F (175°C). In a bowl, mix the graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of a tart pan to form the crust.
Melt the white chocolate chips in a heatproof bowl over simmering water or in the microwave until smooth. Let cool slightly.
In another bowl, whisk together eggs, sugar, vanilla extract, and melted white chocolate until smooth. Gently fold in cranberries.
Pour the filling into the prepared crust and bake for 25-30 minutes until set but slightly jiggly in the center.
Allow to cool at room temperature before refrigerating for at least two hours. Serve chilled.
