  • 1 onion, diced
  • 2 cloves garlic, minced

  • 1 can (14 oz) coconut milk

  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the ground meat, jerk seasoning, breadcrumbs, green onions, egg, salt, and pepper. Mix until just combined.
  3. Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet.
  4. Bake in the preheated oven for 20-25 minutes, or until cooked through and browned.
  5. While meatballs are baking, heat vegetable oil in a large skillet over medium heat. Add diced onions and sauté until translucent, about 5 minutes.
  6. Stir in minced garlic and grated ginger, cooking for 1-2 minutes until fragrant.
  7. Add curry powder to the skillet, stirring for another minute to release the flavor.
  8. Pour in the coconut milk and vegetable broth, stirring to combine. Bring to a simmer.
  9. Add soy sauce and lime juice, letting the sauce simmer for 10 minutes to thicken slightly.
  10. Once the meatballs are done baking, add them to the coconut curry sauce. Gently stir to coat.
  11. Let everything simmer together for an additional 5 minutes to meld the flavors.
  12. Remove from heat and garnish with fresh cilantro before serving.
